Walking Taco Casserole

Once the casserole was ready, I added a layer of corn chips on top of the cheesy beef mixture. For the finishing touches, I piled on shredded lettuce, halved cherry tomatoes, sliced green onions, diced cilantro, and a dollop of sour cream and salsa. Ingredients:

Taco Seasoning Mix:

  • 1 tbsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 tsp fine sea salt
  • 1 tsp ground black pepper
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp dried oregano

Taco Casserole:

  • 1 lb lean ground beef
  • 1 medium yellow onion, diced
  • 1 can of RO-TEL original (undrained)
  • 1/4 cup water
  • 2 cups freshly grated sharp cheddar cheese
  • 3 cups corn chips

Toppings:

  • 1 jalapeno (optional, sliced and diced to taste)
  • 1 cup shredded lettuce
  • 8 cherry tomatoes, halved
  • 2 green onions, sliced
  • 2 tbsp diced cilantro
  • 1/4 cup sour cream
  • 1/4 cup salsa

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together all the ingredients for the taco seasoning.
  3. In a large oven-safe skillet over medium heat, cook the ground beef and onions until the beef is browned, about 10 minutes. Drain any excess fat.
  4. Add the taco seasoning mix, water, and RO-TEL to the skillet. Sprinkle the grated cheddar cheese on top. Bake in the oven for 10 minutes or until the cheese is melted and bubbly.
  5. While the casserole is baking, prepare the toppings.
  6. Once the casserole is done, add a layer of corn chips on top. Garnish with lettuce, tomatoes, green onions, jalapeno (optional), sour cream, and salsa.
  7. Serve and enjoy!
