Pineapple Upside-Down Cake

Pineapple upside-down cake has always been my favorite! This classic dessert never goes out of style, and it’s sure to be a hit at any gathering. With its glistening slices of caramelized pineapple on top of a soft, buttery cake, this dish truly shines. Originating in the 1920s when canned foods became popular, pineapple upside-down cake combines the simplicity of canned pineapples with the magic of a buttery white cake. Best served warm from the oven, with or without a spoonful of lightly whipped cream, it’s a treat that never disappoints.
Ingredients:
- 2/3 cup packed brown sugar
- 1 stick butter
- 7-8 maraschino cherries, cut in half (optional)
- 1 large can of pineapple slices, drained
- 4 oz unsweetened applesauce
- 1/4 cup vegetable oil
- 1 cup pineapple juice (use juice from canned pineapple if it’s pure juice, not syrup)
- 3 eggs
- 1 box yellow cake mix
Instructions:
- Prepare the Cake Batter: In a large mixing bowl, whisk together the cake mix, eggs, pineapple juice, vegetable oil, and applesauce until smooth.
- Prepare the Pan: Line your cake pans with parchment paper (cut to fit), then lightly spray with baking spray.
- Make the Caramelized Pineapples: In a non-stick pan, melt the butter over medium heat. Once the butter has melted, add the brown sugar and stir until the mixture starts to bubble. Pour the caramelized brown sugar and butter mixture evenly into both cake pans.
- Arrange the Pineapple and Cherries: Place the pineapple slices on top of the brown sugar mixture in each pan. If using maraschino cherries, place half a cherry in the center of each pineapple ring.
- Bake the Cake: Pour half of the prepared cake batter into each cake pan. Bake at 350°F for 28-30 minutes or until the cake is fully cooked (a toothpick inserted into the center should come out clean).
- Serve: Let the cake cool for a few minutes, then turn it onto a plate. The caramelized pineapple will form a beautiful, juicy brown sugar filling that will be the star of the cake.
