Walking Taco Casserole 😋😋

A fun and delicious twist on the classic taco, this casserole is packed with all the flavors you love in a taco but with a crunchy, cheesy, creamy finish. Perfect for family dinners or a crowd-pleasing meal!

Ingredients:

  • 1 ½ pounds Ground Beef
  • 1/3 large Onion, chopped
  • 1 can Green Chilies (small can)
  • 1 can Enchilada Sauce
  • 2 ounces Cream Cheese
  • 1 bag Fritos Corn Chips
  • 1 bag Shredded Cheese
  • ¾ cup Shredded Lettuce
  • ½ cup Fresh Diced Tomatoes
  • 16 ounces Salsa
  • 8 ounces Sour Cream

Directions:

  1. Brown the ground beef with the chopped onion in a skillet over medium heat.
  2. Once browned, add the green chilies, enchilada sauce, and cream cheese to the beef mixture. Stir until the cream cheese is fully melted and everything is well combined.
  3. In a 9×13 inch baking pan, layer the following: start with a layer of Fritos chips, then add a layer of the meat mixture, followed by a generous amount of shredded cheese.
  4. Bake at 350°F for 15-20 minutes, or until the cheese is melted and bubbly.
  5. Once baked, top each serving with shredded lettuce, fresh diced tomatoes, salsa, and a dollop of sour cream as desired.
