Stupid Pie

Don’t be deceived by the name—this “Stupid Pie” is an incredibly delicious and effortless dessert to prepare! Featuring a meringue-like base, crunchy Ritz crackers, and rich pecans, this unique treat is both satisfying and simple. Instructions:

  1. Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease a 9-inch pie plate with nonstick cooking spray or butter, then set it aside.
  2. Whip the Egg Whites: Using an electric mixer on low speed, beat the egg whites until foamy. Gradually add the granulated sugar while continuing to mix.
  3. Form Stiff Peaks: Increase the mixer speed to high and beat until stiff peaks form. The peaks should hold their shape when the beaters are lifted.
  4. Crush the Crackers: Lightly crush the Ritz crackers, ensuring they are broken into pieces rather than fine crumbs.
  5. Combine Ingredients: Gently fold the crushed crackers, chopped pecans, and vanilla extract into the whipped egg whites, being careful not to deflate the mixture.
  6. Bake the Pie: Spread the mixture evenly into the prepared pie plate. Bake for 25-30 minutes, or until the crust turns a light golden brown.
  7. Cool Completely: Remove the pie from the oven and allow it to cool fully at room temperature.
  8. Add Whipped Topping: Once the crust is cooled, evenly spread the thawed whipped topping over the pie.
