SIMPLE CROCK POT MEATLOAF

Sweet & Spicy Meatloaf has quickly become a favorite in our house. Ground beef is so versatile, and with the right ingredients, it can easily be transformed into a flavorful and juicy masterpiece. I adapted this recipe from my sister, Angela, who made it for a family gathering, and everyone couldn’t get enough of it. No more dry meatloaf here—this one is bursting with flavor and spice!

Ingredients

Meatloaf

  • 1 lb ground beef (90% lean recommended)
  • 1 egg
  • ½ sleeve saltine crackers (crushed)
  • ¼ tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 clove garlic (diced)
  • 1 jalapeño (diced, with seeds for extra spice)
  • ⅓ cup shredded cheese (Cheddar Jack works great)

Topping

  • ½ cup ketchup
  • ¼ cup brown sugar
  • 2 tbsp honey

Instructions

  1. Preheat oven to 350°F.
  2. Mix the meatloaf ingredients together in a medium bowl until well combined.
  3. Prepare the pan: Grease a meatloaf pan and spread the meatloaf mixture evenly inside.
  4. Prepare the topping: In a small bowl, combine the ketchup, brown sugar, and honey. Stir well.
  5. Top the meatloaf: Pour the topping mixture over the meatloaf.
  6. Bake: Cover the meatloaf with foil and bake for 30 minutes.
  7. Finish baking: Remove the foil and bake for another 30-45 minutes or until the meatloaf is cooked through.
