SIMPLE CROCK POT MEATLOAF

Sweet & Spicy Meatloaf has quickly become a favorite in our house. Ground beef is so versatile, and with the right ingredients, it can easily be transformed into a flavorful and juicy masterpiece. I adapted this recipe from my sister, Angela, who made it for a family gathering, and everyone couldn’t get enough of it. No more dry meatloaf here—this one is bursting with flavor and spice!
Ingredients
Meatloaf
- 1 lb ground beef (90% lean recommended)
- 1 egg
- ½ sleeve saltine crackers (crushed)
- ¼ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp pepper
- 1 clove garlic (diced)
- 1 jalapeño (diced, with seeds for extra spice)
- ⅓ cup shredded cheese (Cheddar Jack works great)
Topping
- ½ cup ketchup
- ¼ cup brown sugar
- 2 tbsp honey
Instructions
- Preheat oven to 350°F.
- Mix the meatloaf ingredients together in a medium bowl until well combined.
- Prepare the pan: Grease a meatloaf pan and spread the meatloaf mixture evenly inside.
- Prepare the topping: In a small bowl, combine the ketchup, brown sugar, and honey. Stir well.
- Top the meatloaf: Pour the topping mixture over the meatloaf.
- Bake: Cover the meatloaf with foil and bake for 30 minutes.
- Finish baking: Remove the foil and bake for another 30-45 minutes or until the meatloaf is cooked through.
