Lunch Lady Brownies
These classic brownies bring back the nostalgia of school cafeteria treats, featuring a rich, fudgy texture topped with a smooth chocolate frosting. Simple to make and irresistibly delicious, they’re the perfect dessert for any occasion!
Ingredients
For the Brownies:
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 eggs
- 3 teaspoons vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1 cup all-purpose flour
For the Frosting:
- 2 tablespoons butter, softened
- 3 tablespoons milk
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 cups powdered sugar
Instructions
1. Preheat & Prep the Pan
- Set your oven to 350˚F (175˚C).
- Line a 9″x9″ baking pan with foil, leaving some overhang for easy removal.
2. Make the Brownie Batter
- In a mixing bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs and vanilla, stirring until fully incorporated.
- Gradually mix in the cocoa powder and flour until the batter is smooth and even.
- Pour the batter into the prepared pan, spreading it evenly.
3. Bake
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let the brownies cool slightly before frosting.
4. Prepare the Frosting
- In a bowl, mix the softened butter, milk, cocoa powder, and powdered sugar until smooth.
- If the consistency is too thick, add more milk, one tablespoon at a time. If too thin, add powdered sugar gradually.
5. Frost & Serve
- Spread the frosting over the warm brownies, letting it slightly melt into the surface.
- Cut into squares and lift them from the pan using the foil for easy serving.
